Aloo Dum recipes - Indian Vegetable Recipes

Ingredients for Aloo Dum recipes:
- Potatoes: 10 (small)
- Poppy seeds: 1 tbsp
- Red chili powder: 1 tsp
- Onions: 3 (mid sized)
- Coriander Powder: 2.5 tsp
- Cumin Powder: Half tsp
- Cardamom: 3 pods
- Yogurt/dahi: Half cup
- Garam masala: 1tsp
- Coconut: 3 tbs (shredded)
- Ginger: Small piece
- Coriander leaves (chopped): 1 tbsp
- Oil for deep fry
- Salt to taste
Method of preparation for Aloo Dum:
First boil the potatoes and keep it aside. Peel the boiled potatoes. Fry the potatoes now till they become slightly brown. Set it aside after draining the excess oil. Take a pan and fry the onions till they are slightly brown in oil. Make a paste out of coconut, ginger, poppy seeds, cardamon and green chilies. Add this paste with onion and fry them till the oil separates. Now add cumin, dhaniya, and chili powder and stir well. Finally add yogurt, salt and potatoes. Add water now and let the ingredients come to boil till the gravy becomes thick. Add garam masala and mix well. Garnish it with chopped coriander leaves. Serve it with roti, nan or rice.
