Indian food is known for its focus of vegetarianism. Indian recipes use more types of vegetables then any other country specific recipes of the world. Indian cuisine is very diverse as the people. Though vegetarianism is popular, there is a large population are also meat eaters.
If we take a look at different parts of India then north and west have kashmiri and mughlai cuisines which have a big influence of central Asia. Eastern part which includes Bengali and Assamese cuisine have a greater influence of east Asia. Coastral regions use more of fish and coconut in their meals. Tamil people use more of tamarind Andhra kitchens are dominated by chilies. People in northern India use more of flours in their kitchen where as rice dominates the south.
Like all other facets of life, India’s culinary tradition is constantly changing in relation to vegetarianism and non-vegetarianism whereby adherence to a specific food habit becomes a powerful symbol of caste, ethnic group and religious orientation. To sum it up, Indian cuisine is greatly influenced by Aryans, Mongolians, Turks, Greeks, Chinese, Arabs, Persians, British and Portuguese.
