Mango Chicken Fry

Ingredients for Mango Chicken Fry:
- Chicken breasts: 2 (skinned and boned)
- Olive oil: 2 Tbsp
- Soy sauce: 1 Tbsp (low sodium)
- Pineapple juice: 1/4 cup
- Brown sugar: 2 Tbsp
- Ginger: 1/4 tsp
- Green bell pepper: 1 (cut into strips)
- Slivered almonds: 1/2 cup
- Mangos: 2 (peeled, seeded and sliced)
- Salt and pepper to taste
- Cooked rice: 4 cups
Method of preparation:
First cut the chicken in small cubes of 1 inch each. Take a pan and pour oil to it. Put the chicken pieces and fry it till it turns brown. On the other side take a bowl, add brown sugar, pineapple juice, soy sauce, ginger and mix it well. Now add almonds and bell pepper in pan and fry till it is tender. Put soy sauce mixture to pan and fry it further till it is thoroughly heated. Reduce the heat and add mango, pepper and salt. Heat it for further 1 minute. Serve it hot.
